Ingredients

  • 12 Lettuce Jammers™
  • 2 cups pork shoulder, slow braised and shredded
  • 1 anaheim chile pepper, roasted and chopped
  • 1 tsp. salt (split)
  • 3 Tbs. unsalted butter, softened
  • 2 Tbs. lard, softened
  • 1/4 cup masa corn flour
  • 1/3 cup sugar
  • 1/2 cup skim milk
  • 2 cups corn kernels
  • 1/2 cup cornmeal
  • 1 tsp. baking powder
  • 2 Tbs. whole milk
  • 8 tomatillos, husked and roasted
  • 1/2 medium yellow onion, coarsely chopped
  • 1 serrano chile pepper, roasted, seeded and chopped
  • 1/3 cup washed and trimmed cilantro
  • 2 Tbs. lime juice
  • 1 Tbs. brown sugar

Directions

Meat: Combine shredded pork, roasted chile peppers, 1/4 tsp. salt and pepper; reserve.

Corn base: With a mixer, combine butter, lard, masa and sugar; mix until smooth paste is formed; reserve. In a food processor, combine skim milk and half of the corn kernels; process until smooth. With mixer running, add to butter mixture. Fold in remaining corn, cornmeal, baking powder, 1/2 tsp. salt and whole milk. Pour into a flat, square pan; cover with plastic wrap. Steam for one hour or until toothpick inserted into center comes out clean.

Tomatillo Salsa: Add tomatillos, onions, serrano, cilantro, lime juice, 1/4 tsp. salt and brown sugar to food processor; mix until smooth.

Assembly: Top Lettuce Jammers™ with equal portions of corn, pork and salsa; wrap.

Makes 12 Jammers.
