  • 12 Lettuce Jammers™
  • 5 boneless, skinless chicken breasts, poached and shredded
  • 3 large red bell peppers, roasted and sliced
  • 2 large yellow bell peppers, roasted and sliced
  • 1/2 cup sliced green onions
  • 3/4 cup coconut milk
  • 1 Tbs. red curry paste
  • 1/2 cup peanut butter
  • 1 1/2 Tbs. brown sugar
  • 1 1/2 Tbs. lime juice
  • 1/4 tsp. salt and pepper
  • 1/4 cup cilantro, chopped
  • Directions

    Toss chicken, roasted peppers and green onions in a mixing bowl; reserve. Combine coconut milk, red curry paste, peanut butter, brown sugar, limejuice, salt and pepper, and cilantro in a saucepan. Whisk while heating over medium heat until smooth and thick; cool. Add peanut sauce to chicken mixture. Fill Lettuce Jammers™; sprinkle sesame seeds atop.

    Makes 12 Jammers.
