  • 12 Lettuce Jammers™
  • 2 Tbs. brown sugar
  • 1/3 cup low-sodium soy sauce
  • 2 Tbs. corn starch
  • 2 Tbs. sesame oil
  • 6 boneless, skinless chicken breasts, cubed
  • 3 Tbs. peanut oil
  • 1 Tbs. fresh ginger, minced
  • 1 Tbs. Garlic, minced
  • 1/4 cup shallots, sliced
  • 2 cups mushrooms
  • 1/3 cup sliced green onions
  • 1 cup water chestnuts, sliced
  • 2 cups broccoli florets, steamed
  • 2/3 cups cashews
  • 2 Tbs. oyster sauce
  • 1/4 cup chicken broth
  • salt and pepper, to taste


Combine brown sugar, soy sauce, cornstarch and sesame oil. Add chicken to mixture and marinate for 1/2 hour.

Heat 2 tablespoons peanut oil in wok; add ginger, garlic and shallot. Stir-fry until shallots softens; add chicken pieces, reserving marinade; cook until chicken is opaque. Add mushrooms and green onions; when browned, remove and reserve. To same wok, add remaining peanut oil. Add water chestnuts and broccoli florets; stir-fry two-to-three minutes. Add cashews, oyster sauce, broth and reserved chicken mixture and reserved marinade; stir well while cooking 5 more minutes. Fill Lettuce Jammers™ with hot mixture.

Makes 12 Jammers.
